In this tour through the streets of Latin America, I want us to find in the Street Food trend the very origin of these sensory pleasures that food gives us. That’s why I want us to make a much deeper journey, you and I will also go to the crops that give us the wonderful raw material to make magic in the streets where we find trucks, street stalls and much more!
LET’S ANOINT OUR HANDS WITH FARMLAND! To explore the true roots of Latin American flavour, we must appreciate Mother Earth or PACHA MAMA as part of the idiosyncrasy that runs through the knowledge and gastronomic practices in Latin America. Considering crops as a fundamental part of the food we bring to the table every day will allow us to understand together the importance of each ingredient on our table, while bringing us a little closer to cultures that may seem far away.

The best of this trip will be to know from the root to the fruit! We will probably travel not only through space, shortening distances, but also in time. We will try to converse with the past, unveiling in contemporary preparations rites and practices of ancestral human groups that populated Latin America thousands of years ago, recogneizing the importance of unwritten languages, such as ceramic horizons and oral tradition.
